What is specialty coffee?
Specialty coffee is defined by the Specialty Coffee Association (SCA) as a coffee or coffee experience that is recognized for its distinctive attributes, resulting in a higher value within the marketplace.
Traditionally, coffee quality has been assessed using the Specialty Coffee Association (SCA) cupping protocol, where certified Q-graders taste a coffee sample and assign it a score out of 100.
Coffees scoring 80 points or above were considered “specialty.” The new SCA Coffee Value Assessment (CVA) builds on this by separating evaluation into distinct categories, (more on this later) but part of the industry and many consumers still focus on that single number…
Why don’t you use the quality score?
We have an “internal quality score system” we don’t use it as a tool to sell our coffees, we think each coffee is much more than a score written on the label.

Where do you source your coffee from?
We source directly from trusted producers and importers around the world, collaborating with farms that share our values of quality, transparency and sustainability.
What is agroforestry coffee and why do you choose it?
Agroforestry coffee is grown among trees and diverse plants, which supports biodiversity, soil health and climate resilience. We try to choose more and more of it because it benefits both the environment and the communities who grow it.
What are your fermentation impact categories?
We classify our coffees using three fermentation impact categories: Low, Medium, and High.
All coffees undergo fermentation during processing. What differs is how strongly fermentation influences the final flavour in the cup.
Our categories help make that influence clearer and easier to understand.
Each category is represented by a distinct colour and design on our packaging, so you can quickly recognize the style of coffee inside the bag.
Are all coffees fermented?
Yes. All coffees undergo fermentation.
After coffee cherries are harvested, naturally occurring microorganisms break down sugars in the fruit surrounding the beans. This process happens in every coffee processing method.
What changes from coffee to coffee is how fermentation is managed and how much it shapes the final flavour.
What kind of coffees fall into each category?
Coffees where fermentation plays a minimal role, allowing terroir, altitude and cultivar expression to take center stage. Expect clean, transparent and origin-driven flavour profiles.
Coffees where fermentation has a moderate influence, adding layers of complexity while preserving the coffee’s original identity. Expect deeper sweetness, fruit character and higher complexity.
Coffees shaped by extended fermentations or yeast inoculation, revealing more expressive and process-driven flavour experiences. Expect intense layered acidity, pronounced fruit notes and bold profiles.
Do you sell infused or co-fermented coffees?
No. We choose not to feature infused or co-fermented coffees, where fruits or flavouring solutions are added during fermentation.
While these coffees can produce very bold flavours, we believe they disrupt the natural relationship between terroir and flavour, replacing it with an artificially constructed profile.
Do you offer ground coffee or only whole beans?
We recommend whole beans for the best flavor, but we can grind your coffee to suit your brewing method upon request.
Why do you have options for filter or espresso roasts?
Different brewing methods extract coffee in different ways to different strenghts. Therefore we believe our job is to find the most appropriate roast profile to suit that brewing method.

Packaging & Degassing
What material is your packaging?
Our bags are made from a mono-material polypropylene structure, designed to be recycled within standard plastic recycling streams.
This structure is simpler to sort and recycle in waste management facilities.
It also reduces the use of forest-derived fibres, aligning with the direction of new European sustainability regulations for supply chains, such as the EU Deforestation Regulation (EUDR).
What is coffee degassing and when should I brew your coffees?
After roasting, coffee naturally releases carbon dioxide (CO₂) that forms during the roasting process. This is called degassing.
If coffee is brewed too soon after roasting, the excess gas can interfere with extraction, often leading to uneven brewing and muted flavours.
Allowing the coffee to rest lets the gas gradually escape and helps the coffee express its flavours more clearly.
The ideal resting time can vary depending on the coffee and the brewing method, but as a general guideline:
Espresso: 15–45 days after roasting
Filter brewing: 7–35 days after roasting
Why don’t your bags have a zip or a one-way valve for degassing?
After extensive testing and research, including our 2022 World Barista Championship presentation with the University of Oregon on coffee degassing stages, we found that our coffees benefit from a more stable degassing process.
Instead of using a zip and valve, we manually remove excess oxygen when folding the bag and secure it with a clip. This prevents the bag from inflating and avoids creating headspace between the beans and the top of the bag. On the back of each package, you’ll find our recommended degassing times to enjoy the coffee at its best.
How should I store my coffee for maximum freshness?
Keep your coffee away from light, heat, and moisture. Its original packaging works well and once opened, close it by removing manually the oxygen and block with the provided clip.

How long does shipping take?
Delivery times depend on your location. In Italy, orders typically arrive within 2–3 business days. International deliveries may take 5–10 business days.
How much does shipping cost?
Shipping costs vary by destination and weight. You’ll see the exact rate at checkout.
What is your return or refund policy?
We want you to love your coffee. If your order arrives damaged or incorrect, contact us at info@peacockscoffee.com within 7 days and we’ll make it right.

Who can join your training sessions — beginners or professionals?
Our courses are designed for everyone, from curious beginners to seasoned baristas looking to refine their skills.
Do you offer private or group sessions?
Yes, we offer both. You can join a scheduled group course or book a private session tailored to your needs.
How do I book a course?
Simply choose your desired course. By purchasing the course you reserve your spot in the next available session written on the course page. You can also contact us for custom arrangements.
Can I gift a training session?
Absolutely! Our digital gift cards can be used to book any training course.

Is Peacocks Coffee open to the public?
The roastery in Casatenovo (LC) is open by appointment only.
Can I visit your roastery?
Yes, we welcome visits for tours or training — just book in advance.
Is your roastery in Lissone (MB)?
No. Lissone is where the registered office address is, no coffee or visits are available here.
